Enhancement of enzymatic hydrolysis rate of olive oil in water by dimethyl β-cyclodextrin

Abstract

The hydrolysis rate of olive oil by Candida cylindracea lipase in an aqueous solution without surfactants can be increased up to 6-fold by the addition of up to 60 mg/ml of dimethyl β-cyclodextrin (DMCD).
